Watermelon Lime Refreshers

Is there anything more Summer than Watermelon?

I think not.


This extra bit of hot weather had me craving Watermelon like crazy!

But why stick to plain old Watermelon slices?

A couple of friends and I were scorching in the sun and needed a pick-me up. So I decided to experiment a little with whatever I had in the fridge. Pretend I was a cocktail connoisseur as I'm sure more than one of us has done before when trying to make dinner out of a can of tuna, potatoes and carrots.

So here's my recipe for Watermelon Lime Refreshers (which are surprisingly good!).



These Watermelon Lime Refreshers are the perfect pick-me up on a hot Summer's day.

Uber re-hydrating as they are made with Watermelon and cucumber. Plus they are so low on carbs/sugar/calories you can sip away on these without feeling any of the guilt.

They can be whizzed up in a jiffy as long as you have:

* 1/4 of Watermelon

* 1/4 of Cucumber (minus the skin)

* 2 Limes - squeezed

* Big scoop of Lemon Sorbet (*shop bought*)

* Squeeze of Agave Nectar (or any other Sugar syrup)

* Handful of ice

* Watermelon, cucumber & sprigs of mint to decorate

Chop up your watermelon and chuck it in a blender. Don't worry too much about the pips, you won't notice them. Peel your cucumber and add that in too. Then squeeze your limes in, some Agave Nectar and big scoop of lime sorbet. Mine's creamy sorbet so hence my refresher is a little more light in colour. 

Blend it all together. Put some ice cubes into a glass and pour over your mixture. Then cut up some watermelon and cucumber to decorate, not forgetting a sprig of mint to make it extra classy!

My Watermelon Lime Refreshers can be naughty or nice. We had nice ones, as we had them in the morning. 

But if you're feeling a bit naughtier add some Vodka, Tequila or Rum to spice things up. I will leave the measure up to you!
