Tostadas con tomate

This is one of my all time favourite breakfasts.

Forget about your avo on toast.

This is Spain's best kept secret.



I am bringing the taste of the Mediterranean to this gloomy British Saturday with toast topped with sensuous amount of tomatoes, garlic & olive oil.

It is packed full of nutrients and will make you live longer. Fact.

Research suggests the Mediterranean diet holds the key to reducing cellular ageing and that's why Mediterraneans live the longest.

What better way to start your day than with anti-ageing food?


It takes about 5 minutes to whip up.

Perfect for breakfast, lunch or a light snack.

In Spain, you traditionally have it for breakfast. Ask for pan con tomate and they will serve it either as big chunks of tomato with a decanter of olive oil so you can serve yourself or as tomate triturado which is tomatoes, olive oil & garlic all crushed together.  

Make it even more decadent by adding slices of jamon serrano or what the Spanish call catalan. Ask for a pitufo or bocadillo catalan in your local Spanish cafe and they should know exactly what you mean.


To make it you will need:


1 or 2 slices of toast. Today I chose mini slices of seeded brown bread. 

1 clove of garlic

A handful of tomatoes

Good Olive Oil

Salt & Pepper


Peel the garlic and crush it with the side of your knife to get all of the juices out of it. Then finely chop it up and add to a bowl.

Roughly chop up some cherry tomatoes, vine tomatoes or any size of tomatoes you may have.

Mix together the tomatoes & garlic. Drizzle with good bouts of olive oil and season with salt & pepper.

Then with a fork crush the tomatoes together with the garlic and olive oil.

Toast your bread. Spoon on some of the olive oil from your mixture first, then add the tomatoes.

And eat!
